Simple to make and damn tasty

For the mint salad:
• 2 cups Kale, shredded
• 1/2 cup Quinoa
• 2 Celery stalks, chopped
• 1 medium Cucumber, diced
• 1/3 cup Raisins
• 1/3 cup Mint, chopped
• 1/3 cup Coriander, chopped
• 30g Feta
• Salt & pepper to taste

For the caramelised pecans:
• 1/2 cup Pecans, roughly chopped
• 1.5 Tbsp. Maple syrup
• Pinch of sea salt

For the dressing:
• 2 Tbsp. Hulled tahini
• 2 Tbsp. Seeded mustard
• 1.5 Tbsp. Honey or maple syrup
• Water to thin
• Pinch of salt

✨Cook quinoa as per packet instructions
✨Add pecans, maple syrup & a pinch of sea salt to a small pan on low-medium heat. Heat for a few minutes, stirring occasionally to avoid burning. Take off heat and allow to cool.
✨Add remaining salad ingredients to a large bowl expect for the feta and toss to combine.
✨Make dressing by stirring together the ingredients then toss through the salad. Add the pecans & feta, season with salt & pepper to taste and serve with your choice of protein for a yummy balanced meal 💚
