Porridge… and veggies! 😵😭😳 |

What if I told you there was a way you could start chipping away at that ‘5 a day’ as early as your first meal? Well, it’s simple to do when you make my courgette and carrot porridge! |

1️⃣Prep microwave porridge as normal (I use 1/2 cup fine quick oats and 2/3 cup milk)
2️⃣…Except, just before they are finished heating – at roughly 90 seconds after having stirred at 60 seconds – add grated courgette and carrot (as much as desired), a little more milk, and then place back in the microwave for approximately another 90 seconds, stirring at 30 second intervals to keep the porridge soft!
3️⃣I served mine with some frozen raspberries – a tasty natural sweetener! 🥣 |

I don’t blame you if you’re not yet convinced as it’s definitely not your conventional combo so I definitely recommend you try this ASAP and decide for yourself! It’s a fab way to make your porridge a bit thicker and more satisfying – giving it more volume – and is a great alternative if you’re after a semi-savoury brekkie AND are keen to disguise your veggies so you hardly know you’re eating them!🤪😆 |

The great thing about this breakfast is that you can add as many and whatever extra toppings you like to make it taste and look a little more exciting – something I like to do is add 1/4 tsp. of cinnamon to the mixture too! My focus with the first bowl however was to show you how simple and affordable but also nutritious this breakfast can be – an awesome option for during the busy week! |
