Plant based choc-coconut slice 🀎🀍

Decided to make a vegan version of a classic kiwi slice and have shared my recipe below ☺️

What you’ll need:
– 1 cup Wholemeal flour
– 1/2 cup Coconut sugar
– 1 cup Desiccated coconut
– 1 Tbsp. Cocoa powder
– 1/3 cup Lightly flavoured oil (e.g. Sunflower)
– 1/2 tsp. Vanilla extract
– 2 Tbsp. Almond milk

For the icing:
– 1 cup Icing sugar
– 2 Tbsp. Cocoa powder
– 1 Tbsp. Margarine
– 2 Tbsp. Boiling water
– Coconut, to sprinkle

Pre-heat the oven to 175 degrees Celsius and line a square tin with baking paper. Add sugar, oil and vanilla to a bowl and stir to combine. Then stir through the flour, cocoa and coconut. Add the milk so that mixture becomes slightly sticky. Flatten into the base of the tin and place in the oven for 15 minutes. Meanwhile, make the icing by combining all of the ingredients (except for the extra coconut). Spread icing while slice is still warm after coming out of the oven, sprinkle over coconut and allow to cool before slicing
