Now this is a bircher recipe you’re going to want to try – ideal for these warmer days!
Inspired by the crunchy apples that were in the fruit bowl + my new-found love for dried blueberries I’ve come up with a delicious bircher combo – Apple, blueberry and lemon! 🤩

Ingredients:
– 1/2 cup oats (I used fine quick oats but any would work)
– 1/2 cup milk of choice (I use almond or calci-trim)
– 1/2 an apple, 🍏or🍎(cubed)
– A handful of dried blueberries
– Zest or juice of half a 🍋 (both are super delish but offer slightly different tastes)
– 1/8-1/4 tsp cinnamon (depends on how strong you like your cinnamon flavour to be)
– 1/4 tsp vanilla extract

Method:
I combined all of the above ingredients in a bowl, stirred it really well to make sure it was all evenly mixed in, and then left it all to soak in a bowl overnight in the fridge (covered with beeswax wrap 😉). The best part was that when I woke up all I had to do was take it out of the fridge, give it a little stir and it was ready to eat! Decided to keep my toppings simple so just added some more apple and a few frozen blueberries (not gonna lie, it was so tasty it didn’t need them so was really just for presentation 😆) Hope you enjoy this recipe – Let me know if you give it a go! ❤️💙💛
