My number one customer has been requesting french onion soup all winter, so logically now that it’s spring I decided it was time to make it for her. I do find traditional french onion soup a bit on the heavier side, so thought I would attempt to make it a little lighter and brighter to match the warming weather here in Melbourne town. My twile skills obviously need a bit of work, I do like the rustic nature of its form, so perhaps imperfection is perfection?
