Hamen Tonkotsu Ramen. This is my second attempt at making Tonkotsu, the method is predominantly from ramen__lord along with ideas and techniques from various websites and books. Overall very happy with the ajitsuke ramen egg, the chashu which is based on adamliaw recipes (his ramen series on YouTube is amazing) and the noodles. Definitely worth the time and effort over 5 days in ISO to make this from scratch. Looking forward to playing with variations in the tare and noodles.
