DATE and PISTACHIO GRANOLA!!💚💜
Over the past couple of weeks I’ve been experimenting with making my own granola and after a number of attempts I finally reckon I’ve nailed it with this fab combo of dates and pistachios! If you’re keen to test this indulgent, but also nutritious granola for yourself, check out the recipe below…👇🏻


What you’ll need:
– 2 cups wholegrain oats harrawaysnz – 1 cup quinoa puffs ceresorganics – 1/4 cup date syrup cinderellanz_ – 1 tsp. Vanilla extract
– 1 tsp. Cinnamon
– 2 Tbsp. Extra virgin olive oil (EVOO)
– 3-4 large medjool dates, chopped
– 1/4 cup unsalted, shelled pistachios

Method:
⚡️Preheat your oven to 150 Degrees Celsius and line a large tray with baking paper.
⚡️Combine the date syrup, cinnamon and vanilla extract by heating together in a medium pot on low heat. Stir through the oats and quinoa puffs ensuring they’re well coated and then mix through the EVOO.
⚡️Spread the mixture evenly on the baking tray and place in the oven for 15 minutes. Meanwhile, chop the dates, making sure you separate all of the individual pieces so that they don’t stick together, allowing them to be spread evenly throughout the granola.
⚡️After 15 minutes, remove the tray from the oven and add the dates and pistachios, mixing them through the grains. Place back in the oven for 5 more minutes.
⚡️Remove from the oven and allow to cool for 10 or so minutes, stirring every couple of minutes while the granola continues to crisp. This will ensure the granola doesn’t form large clumps.
⚡️Add to a bowl or jar and enjoy with yoghurt, milk, fruit, chia pudding, all of the above or simply by itself as a snack because it’s just that good 🤪


I love how versatile this granola is and how tasty and satisfying it can make any brekkie! What’s more is that it’s totally affordable and quick to make! If you’re not a huge fan of dates or pistachios simply the basic method for toasting the grains and then add whatever nuts or fruit you like – a super flexible recipe!
