Taking a much-loved treat and putting a nutritious spin on the classic PB&choc combo by using simple ingredients and adding a delicious element of my own – homemade blueberry chia jam! 🤭 Recipe below 👇🏻

What you’ll need:
💙Chocolate layer – • Dark chocolate block (I used Whittaker’s 70%), 10 rows (approximately 1&1/4 cups) • Coconut oil, 1&1/2 Tbsp. (melted)
💙Peanut butter layer – • Peanut butter (I used picspeanutbutter), 1/2 cup
• Coconut oil, 1 Tbsp. (melted)
• Honey, 2 Tbsp.
💙Blueberry chia jam layer – • Frozen blueberries, 2 cups
• Black chia seeds, 3 Tbsp.
• Honey, 2 Tbsp.
• Juice from 1/2 a lemon

Method:
💫Place 12 cupcake cases into a muffin tray
💫Melt 4 rows of choc (approx. 1/2 cup) with 1/2 Tbsp. Coconut oil in the microwave until fully melted, stirring at regular intervals. Pour roughly 1&1/2 tsp. of the mixture into the bottom of each cupcake case. Place in the freezer for 10 minutes or until choc is completely solid.
💫Create peanut butter layer mixture by melting PB, honey and oil in the microwave for 20-30 seconds, stirring to fully combine. Pour roughly 1 – 1&1/2 tsp. of the mixture over chocolate layer in each cup. Place in the freezer until solid.
💫Create blueberry chia jam by heating all of the ingredients for that layer over low to medium heat in a small saucepan, mashing the blueberries as much as possible, until mixture reaches a gel-like consistency. Allow to cool before spreading 1-2 tsp. of jam over PB layer, ensuring the top of the layer is made as flat as possible. Place in freezer again until solid.
💫Melt 6 rows of choc (approx. 3/4 cup) with 1 Tbsp. Coconut oil in the microwave until fully melted, again stirring at regular intervals. Pour roughly 1 large spoonful of the mixture on top of the jam or as much as needed to ensure no jam is showing from underneath. Try and make this layer as smooth as possible.
💫Place finished cups in the freezer for 2 hours and then transfer into an air-tight container to be placed in the fridge for storage (If you don’t eat them all first 😉)
