Crunchy, sweet & salty – this bowl’s got it all 🤤 Perfect for a lockdown lunch or dinner!

Serves 2-3:

Cos lettuce, roughly chopped
1 Cucumber, diced
1 can Chickpeas
1 large or 2 sml/med Orange kumara
1/4 cup Raisins
1/4 cup Sunflower seeds, toasted
1/4 cup Hemp hearts harvesttohand
Feta, to serve

Dressing:
2 Tbsp. Hulled tahini
2 Tbsp. Dijon mustard
1 Tbsp. Honey
Juice of 1/2 a lemon
Pinch of salt
Almond or coconut milk (to thin)

For the crispy chickpeas:
Drain & rinse, spread on tray and coat in a drizzle of olive oil, and approx. 1/2 tsp. each of cinnamon, smoked paprika, garlic powder, salt & pepper. Roast in the oven at 220 degrees Celsius. After 10 minutes, remove from oven and toss before returning for another 5-10 minutes or until crispy

The rest of the salad:
Dice kumara, drizzle with olive oil, coat with salt and pepper then roast at the same time as chickpeas. Meanwhile, lightly toast sunflower seeds in a small pan on medium heat for a few minutes until lightly browned and aromatic. Prep all other ingredients and combine in a large bowl. Mix through dressing. Finally, add roast crispy chickpeas and kumara, season with s&p and serve w/ extra hemp hearts & feta 💚
