CHIA PUDDING – Christmas edition ✨

Christmas has come and gone but that’s not stopping me from enjoying this brekkie which I devoured morning after morning over the last couple of weeks 🤪 – matcha chia pudding topped with mashed defrosted raspberries, home-made date and pistachio granola and fresh blueberries (+ some edible flowers 😋🌸) •

Although the matcha powder I picked up from goodforstore only added a very subtle flavour it made the pudding this awesome green colour 💚 Plus, matcha provides numerous incredible health benefits such as being high in antioxidants! With 4 totally different layers there was an awesome combo of textures and flavours, making for an all-round delicious jar! ❤️💚 •

Top tip: Adding psyllium husk to your chia mixture before allowing it to soak will help make it the perfect thick consistency the next day while providing an added bonus of extra fibre! 💯(I used 1 tsp. in my mixture of 2 Tbsp. of chia seeds and 1 cup of liquid)
