Celebratory lockdown level-change slice 🀎🀎

This ones the perfect afternoon pick me up or post-dinner delight, humble in looks but so delicious you won’t be able to stop at just one piece!

I love using the bennettonaturalfoods amaranth & sea salt chocolate for this slice. It gives that top layer a delicious saltiness which perfectly balances the sweetness + the amaranth adds a nice extra crunch!

2 cups oats
1 cup roasted almonds
1 cup dates, soaked in boiling water for 5 mins and drained
Pinch of salt
4 Tbsp. peanut butter
1/3 cup sunflower or other light oil
150g dark chocolate

Blitz everything except the choc in a blender until it’s all well combined and is a sticky, but still slightly crunchy texture. Add a small amount of liquid (water or milk) to help with combining if needed

Press into a square tin and place in the freezer while you melt the chocolate

Once melted, pour choc evenly over the oat base and place back in the freezer to set for at least 3 hours or overnight

Once set, remove from freezer and slice with a large knife. Running the knife under boiling/hot water will prevent the chocolate from cracking

I like to store mine in the freezer but if you prefer it a bit softer it can be kept in the fridge instead
