Celebrating this lovely evening and the end of my first 6 weeks at uni with a delicious dinner on the beach ✨

In frame • Raw 🥦 salad w/ lisashummusnz Falafel

Salad recipe👇🏼(Serves 2-3)

🐚 What you’ll need:
– 2 small-medium Broccoli heads, chopped into small florets with minimal stalk
– 2 Celery stalks, finely sliced and diced
– 1 small Cucumber, diced
– 400g can Chickpeas, drained and rinsed
– 1/4 cup Sultanas
– 1/4 cup Cranberries
– 1/4 cup Capers
– 1/4 cup Sunflower seeds, toasted
– 1/4 cup Hemp seeds
– Salt to taste

🐚 Dressing: (combine ing in a small bowl – I like mine to have a reasonably thick consistency)
– 1/4 cup Hulled tahini
– 1/4 cup Plain yoghurt (or coconut yoghurt)
– Juice of 1/2 a Lemon
– 1/2 Tbsp. Apple cider vinegar
– 1/2 tsp. Garlic powder
– 1/4 tsp. Salt
– Water or milk to thin (if needed)

Combine all of the above salad ingredients in a large bowl, add the dressing and season with salt & pepper 💚 I also recommend adding pickled red onion if you have any and serve w/ your favourite protein 🙂
