Before & after 👉🏼 Father’s Day pesto scrolls w/ cherry tomatoes & feta

3 cups flour, sifted
1 tsp. baking soda
1 3/4 cup Greek yoghurt
3/4 cup pesto
200g cherry tomatoes, sliced or quartered
50g feta
1 egg
1 Tbsp. milk

Pre-heat oven to 200 degrees Celsius and line a circular dish or tin with baking paper

Combine your flour, baking soda & yoghurt in a large bowl

Sprinkle some flour onto your bench and start to knead the dough. Form a rectangular shape with the dough and roll out flat, making the rectangle as large as possible

Spread dough generously with pesto then scatter tomatoes and feta evenly. Roll your dough from the bottom up into a log shape then slice into approximately 12 scrolls

Whisk your egg and milk together in a small bowl, then once you’ve got them in the tray wash egg mixture over the scrolls

Place in the oven for 35-40 minutes until brown and leave to cool for at least ten minutes. Best enjoyed warm 🌿🍅
